Edirne served as the Ottoman capital for nearly a century before Constantinople fell, and the city's skyline — dominated by the soaring pencil minarets of the Selimiye Mosque — has barely changed since Mimar Sinan declared it his greatest achievement in 1575.
As Turkey's westernmost city straddling the Balkan frontier, Edirne blends Ottoman grandeur with Thracian character: a lively bazaar, world-famous liver dishes (ciğer) and the ancient tradition of Kırkpınar, the oldest continuously held sporting event in the world.

- Edirne ciğer (fried liver) — the city's signature dish.
